Aunque el verdadero origen del queso es desconocido, su existencia se menciona ya en los tiempos bíblicos, cuando se consumía en forma de "tajadas de leche" y, como requesón, en la época de Homero. En la mayoría de las lenguas, la palabra queso deriva de la palabra caseína, del latín "caseus", cuyo significado origina carere suerum (que carece de suero raíz), y que le da el nombre al español queso, al portugués queijo, al inglés cheese, al holandés kass, al alemán kasse, etc.
